Brunch Over

I don’t know about you but within my group of friends gone are the days of staying up til 3am dancing in the kitchen... nowadays we’re lucky to make it past a 10pm movie with a glass of wine knowing full well our alarm clocks of various varieties (iPhone, Dogs and babies) will have us up shortly after 6 to get our day going. 

With change comes the need to adapt, and that’s just what we have done, something I like to call a Brunch Over. 

It’s exactly how it sounds - having people over for brunch instead of sleep. 


Here’s what was on the menu: 

  • Mini Quiches

  • Crispy Bacon

  • Sweet Potato Hash

  • Yoghurt Parfait

  • Mini Pancake Kabobs

  • French Toast Dippers

  • Scones

  • Mimosa Bar

  • Tea and Coffee (of COURSE)

  • And fresh fruit with melted chocolate

Now this may seem like a daunting task but there are easy cheats, lets begin shall we?

For Mini Quiches you could simply make your own, my mum makes a killer sausage cranberry quiche however when hosting I quickly pop in some frozen quiches and let them cook while I prep other bits and pieces.

While the Oven is warming, I toss in my bacon and let that cook, I fry off the bacon first because the fat from the bacon greases the pan nicely for my pancakes and french toast.

Hash browns are by far my favourite thing about brunch and I judge a brunch place by their style of hash, and nothing is better than sweet potato so I was very pleased when I came across the OH She Glows Everyday hash recipe!

Best part of Yoghurt Parfaits is that you get your guests to do all the work, simply create a topping bar and place the yoghurt in cute little mason jars with a spoon and tada! Topping Suggestions: Hemp Hearts, Oats, Granola, Quinoa, Fruit, Jam, Nuts, Choco Chips, Syrups, Honey. **Saving Tip**, head over to a bulk store like Bulk Barn that way you are not stuck with tons of leftovers.

Onto Pancake Kabobs and French Toast Dippers, start off by making traditional pancakes, the change comes in your pour...slowly make 2inch circles so they are mini, that way they can fit on a tooth pick. As for the French toast make it as you always would, if you want to keep them sweet you can add vanilla or cinnamon to the egg mix, if you have any guests that prefer it savoury you can omit this step. Once the toast is cooked cut them into halves than stripes, this way they can fix onto a paper plate or better yet I'd recommend a Snack cup so it's easy to dip them into syrup.

If you feel like taking on the mission impossible you can grab Butter Baked goods for delicious scone recipes, or if you're like me you can head over to your local bakery (for me it's Cobs) and buy some scones!

Onto Bevies!

Mimosa Bar's are ideal for any party that way your guests can pick the flavour they like, I usually buy orange juice, grapefruit juice and pineapple juice. Along with prosecco I also grab a bottle of ginger ale and sparkling water for those who prefer a non-alcoholic choice.

It's not even brunch until there's coffee, I always have a pot on the go and the kettle ready for my tea drinking guests.

As for dessert, I keep it simple-ish, chocolate fondue sans fountain. Once again I hea. over to bulk barn and buy white and milk chocolate. To make it a little bit "extra" you can add flavours to your chocolate, like turmeric, earl grey, matcha and charcoal! You can easily dip your french toast and pancakes, along with fruit, waffles and marshmallows!
