Happy Cinco De Mayo Blondies!
While quarantine may feel particularly tough this year, being home all day on a tuesday…especially Cinco De Mayo can’t be that bad, it’s pretty much permission to sit outside and eat fresh guacomole with salsa while sipping on Margaritas!
I am still working on perfecting my Margarita recipes, they’ll hopefully be coming later in the month or at least make an appearance before summer is out so be sure to keep an eye out!
As for the salsa and guacamole I have 3 killer recipes I want to share with you, to make things simple I have created a master list for you along with a breakdown!
Pico De Gallo is the first and you’ll need: 4 cups of roma tomatoes ( I just used 4 tomatoes). 1.5 cups of chopped onion, 1.5 cups of chopped cilantro, 5 cloves of garlic, 2 Jalapenos (for milder taste take out the seeds), 1/2 tsp of lime juice…or in my case eye ball it. Salt, about a tsp.
When it comes to salsa there’s not much of a process, simply dice everything finely and toss it in a beautiful bowl, I used my west elm ones from last summers FabFitFun box.
Blonde moment tip: Cut the onions before the jalapenos, that way if you happen to cry while chopping like yours truly you won’t get jalapeno when you rub you eyes…
Pineapple Salsa this is a sweeter option with a surprising kick, another fun way to play with flavours is dipping fresh pineapple in a bowl of salt and chili powder! As for the salsa you’ll need: 1 cup of pineapple, diced, if you only plan to make the salsa I would recommend you cheat with a tin so you don’t have anything to waste. 1 cup of strawberries, 1 red bell pepper and 1 jalapeno, dice them all together and a mix, then add 1/4 cup of red onion, 1/3 cup of cilantro, 4 tbsp of lime add salt and pepper to taste.
Hosting tip: If you are having people over (obivously not this year) but you can carve out the fresh pineapple and then put the salsa back in when ready to serve!
Guacamole 1 Avo, if you want it for hosting or match the quantity of the salsa I would triple the batch, if you are looking for a solo snack 1 will be just fine. Splash of lime juice…back to blondie measurements haha. 1/4 cup of red onion, 1/4 cup cilantro, 1/2 jalapeno, unless you want it hotter, salt and pepper to taste. I have also seen it without cilantro but with a clove of garlic remember these are measurments for a serving for 1-2 people.
