Carrot Cake Cupcakes with Creme Egg Frosting

As Easter is approaching I thought I'd share a couple goodies I have made, Starting with Carrot Cake Cupcakes with Creme Egg Frosting.

**These are not vegan or healthy**...let's continue.

the original base for the recipe was from pinchofyum.com via pinterest but I did tweak it a bit...Here's what's needed:

  • 1 Cup of Flour

  • 3/4 Cup of Sugar

  • 1tsp Cinnamon

  • .5tsp of baking powder

  • 1tsp of baking soda

  • .25tsp of salt

  • 1.5 cups of grated carrots ( I only used 2 Medium/Large)

  • 2/3 Cup of oil

  • 2 Eggs

According to the recipe it makes about 12...I think I got 9.

I also only used .5 Cup of Sugar.

350c Degrees for 15 mins.

As for the Frosting...I ended up with lots leftover I think I may do a makeshift cheesecake, as it is a cream cheese frosting.

  • 4oz of Cream Cheese

  • 4tbsp of Butter

  • 2 Cups of Icing Sugar

  • 1tsp of Vanilla

  • 5 Creme Eggs.

I would blend the Creme Eggs first because crushing them still leaves large chunks in the mixing causing some issues when I went  to pipe the icing.
