Pumpkin Loaf

It’s pumpkin season, whether you celebrate in Thanksgiving in october or november…or not at all, there’s always time for pumpkin!

I love this recipe because it’s so simple, and easy clean up. Here’s what you’ll need:

  • 2 Eggs

  • 1tsp Vanilla

  • 1tsp Baking Soda

  • 2 tsp Pumpkin Spice

  • 8oz of Pure Pumpkin Puree

  • .5 Cup of Olive Oil

  • 1 Cup of White Sugar

  • 1.5 Cups of Flour

As they used to say on my favourite tele programme…Ready, Steady COOK!

Step 1: Set your oven to 350f.

Step 2: Mix all the ingredients in a medium bowl. Whisk until smooth and NO LUMPS.

Step 3: Line loaf tin with parchment paper.

Step 4: Pour mixture into tin

Step 5: Let bake until toothpick, cake tester comes out clean. About 50-55 mins.

Take these 55 mins to pop on your fave show or tunes and clean the dishes and pop the kettle on, that way as soon as the loaf is ready you can cosy on up and relax. I told you it’s super simple.
