Watermelon Day

Hello Blondies!

Watermelons are probably one of my favourite fruits…after grapefruit and raspberries. In Calgary for the past week we have had a steady heat wave, one of which I am not complaining about and feeling especially blessed that the lake is just out the back garden gate.

If you are one of they few who don’t like watermelon…there’s something wrong with you, and you can comeback next week when we’re not talking about all things watermelon.


With the heat being so overwhelming, my appetite seems to disappear, I tend to reach for more water and smoothies rather than proper meals however, Watermelon Salad is one of my go-to favourites during the summer. Over the past few years I have been tinkering around with various combinations, this one has come to be the winner.

If you are one with a bigger appetite you could quick easily add a chicken breast too top or add quinoa to the base to give it a bit more substance.

As for today it is +31 (over 80 for my Americans), so the lighter the better, plus no one really wants to wait 30mins before they pop back in the water.

Heres what you’ll need for a Lunch Serving for 4.

1 Quarter Watermelon
142 Grams (1 box) of Arugula & Spinach
1/4 of thinly sliced Red Onion
2 Raddishes
2 Sprigs of Mint Leaves

For add ons you can simply use:

1/4 cup chopped Walnuts
1/4 cup crumbled Feta
1 Avocado
1 Chicken Breast

Of course you can add as much or as little as you like.

While I wouldn’t consider myself a tequila drinker, I do like a fresh margarita from time to time, typically at Anejo or Blanco downtown Calgary, but I thought I would venture out and try and create my own version of the Jalepeno Watermelon, but I switched up the Tequila for a Mezcal.

  1. I used a blended to blend up 2 cups of watermelon, then drained out the juice and put it in cocktail ice cube molds. Before freezing you could also add a couple of slices of Jalepeño into the the molds.

  2. Once Frozen simply put into a whisky glass add a couple of slices of jalepenos and pour over the Mezcal (or Tequila).

  3. Simple stir and enjoy!
